The nose expresses ripe fruit overtones – strawberry, quince – together with scattered overtones of grilled almond. A well-balanced mouth.     An appoggiatura, from the Italian verb appoggiare, meaning to sustain, is a melodic ornament that serves to retard a following note that requires emphasis. Appoggiature is thus the key note Champagne of the Domaine B. Girardin range. It introduces the house style, first in line with its delicately fruity flavours. Aromas of flowers, pears and white peach are conveyed by delicate and gentle bubbles, making this an ideal aperitif drink. The French horn, symbol of this cuvée, was considered, prior to the 18th century, to be the instrument of spells and bewitchments. The Appoggiature cuvée entices us to pursue the melody with the expressive cuvées Rubato, Point d’Orgue and Vibrato.

  7. Champagne Girardin Cuvee Rubato (Doux)

    A blend of 60% Chardonnay, 30% Pinot Meunier, 10% Pinot Noir. Dosage: 120 g/L

    Ageing: more than 5 years. Harvest years: mainly 2006.

    Rubato, which means «hidden» or «secret» in Italian, signifies an instruction to accelarate certain notes and slow down others. These variations in speed of execution are applied according to the will and inspiration of the conductor or musician. The melody is thus momentarily held back and this effect, when well handled, can give a specific tonality to the rendering. The cuvée Rubato is analogous to this notion as it signifies the coming together of a wine, as a tune with its specific rhythm, and the winemaker playing the part of a musician-interpreter. Very fine bubbles almost stand still in the glass. The wine is both sweet and vibrant, showing notes of quince and green plum. This Champagne has two sides to it: its rythm is provided by the crispness of the fruit flavours and the sweetness by the winemaker. Cuvée Rubato opens up a whole new field in terms of wine & food pairing: as an aperitif with a slice of lemon, with pan-fried foie gras, or with a fruit- based dessert like apple pie. One can use its altering rythms to ring the changes! The double bass, which symbolises this cuvée Rubato, was the accompanying instrument at the time of Bach or Handel for singers who practised rubato.

  10. Champagne Girardin Cuvee Point D'Orgue Vintage 2007 (Brut)

    A blend of 30% Chardonnay, 30% Pinot Meunier, 40% Pinot Noir. Dosage: 8 g/L

    Harvest year: 2007 and Ageing: 5 years

    The French musical term Point d’orgue is the equivalent of fermata in English musicology. Its function is to prolong a note or series of notes, thus creating a pause in the tempo. The term itself refers to the capacity of the organ, as an instrument, to hold a note for an unlimited duration. Cuvée Point d’Orgue supends the flow of time, like for the duration of a harvest. Quality naturally depends on this harvest, and time will decide when the wine is ready to be drunk. The 2007 vintage now reveals its vinosity through the leading role played by Pinot Noir. The aromas are rich with notes of pear and honey and the flavours linger on the palate like a note held fermata.
    The piano is the symbol of the cuvée Point d’Orgue. It illustrates the producer’s solo role in deciding to vintage a year, or not. In this case the producer is herself a pianist. She alone decides the partition of the year.
